Menu Plan Monday
Last week, for the first time ever, I posted what dinners we were going to eat for the week.
Now, naturally, I’m hooked.
In case you haven’t noticed, I tend to have an obsessive personality. Which can be a blessing and curse at the same time and is responsible for most of the successes and failures I’ve endured during my lifetime.
And, like any obsessive habit you may boast, there’s a linky for it!
I’m linking up over at I’m an Organizing Junkie with her Meal Plan Mondays. This woman speaks my language. I’m happy to have found her site. (Thanks, Stephanie, for linking up, so that I could
obsess over find it.)
In an effort to keep this post under 300 words (see above self-diagnosed condition- it does not exclude wordiness), here’s our meal plan for this week:
Monday: Baked Cod (with lemons), blanched green beans w/ lemon & sea salt, sweet potatoes
Tuesday: Dinner at my parent’s house.
Wednesday: Smashed steak skewers w/ cherry BBQ sauce by Nom Nom Paleo. (The photo below was taken by and belongs to Nom Nom Paleo. But I posted it here to show you how ridiculously good they look. Click on it for recipe.) Roasted carrots & squash. Salad w/ cukes, avocado, tomatoes, green olives & sunflower seeds.
Thursday: (usually eat at my in-law’s house, but this week they are in sunny Florida, so we must fend for ourselves.) Grilled shrimp skewers. Black beans w/ jalepenos. Brown rice. Roasted asparagus.
Friday: Grilled jerk chicken. Sauteed brussel sprouts. Roasted butternut squash.
We don’t plan weekends because we are all over the place, so we wing it.
